Main Ingredients
1.5 cups Thick or Medium Poha (Flattened Rice), rinsed and drained
1 medium Onion, finely chopped
½ cup Mixed Vegetables (Carrots, Green Peas, Bell Peppers, Boiled Sweet Corn)
¼ cup Boiled Sprouts or Diced Paneer (for extra protein)
2 tbsp Peanuts, dry roasted
For Tempering (Tadka)
1 tsp Olive Oil or Mustard Oil
½ tsp Mustard Seeds (Rai)
½ tsp Cumin Seeds (Jeera)
8–10 Curry Leaves
1–2 Green Chillies, finely chopped
1 pinch Asafoetida (Hing)
Seasoning & Garnish
½ tsp Turmeric Powder (Haldi)
To taste Salt
1 tbsp Fresh Lemon Juice
2 tbsp Fresh Coriander Leaves, chopped
Step-by-Step Instructions
Rinse & Season the Poha: Place the poha in a colander and gently rinse under running water for 30 seconds. Drain completely. Sprinkle turmeric, a pinch of salt, and 1 teaspoon of lemon juice over it. Gently fluff with a fork and set aside.
Roast Peanuts & Temper: Heat oil in a non-stick pan over medium heat. Dry roast the peanuts until golden and crisp, then remove and set aside. In the same pan, add mustard seeds, cumin seeds, curry leaves, hing, and green chillies. Sauté for 30 seconds until aromatic.
Sauté the Vegetables: Add the chopped onions and sauté until translucent. Toss in the mixed vegetables and sprouts/paneer. Cover with a lid and cook on medium heat for 3 to 4 minutes until tender-crisp.
Combine & Steam: Fluff the prepared poha and add it to the pan. Gently mix everything together so the colors and flavors combine evenly. Cover with the lid and let it steam on low heat for 2 minutes.
Garnish & Serve: Turn off the heat. Stir in the roasted peanuts, fresh coriander, and remaining lemon juice. Serve hot with a cup of green tea or masala chai.
