.There is something magical about the sound of raindrops while you are sitting in the comfort of your home. For me, that “monsoon mood” is incomplete without the perfect companion aromatic cup of Masala Chai paired with a plate of piping hot, crunchy fritters (pakoras).

It’s not just a snack; it’s a feeling of home, warmth, and nostalgia.

For the Crunchy Pakoras:

  • 2 large onions (thinly sliced)

  • 1.5 cups besan (gram flour)

  • 2 tbsp rice flour (this is my secret for that extra crunch)

  • Fresh green chilies and chopped coriander

  • Spices: Salt, turmeric, red chili powder, and carom seeds (ajwain) for digestion.

For the Masala Chai:

  • Full cream Milk  (as per your choice)

  • Tea leaves and sugar

  • My Special Spice Mix:    Freshly crushed ginger, 2 cardamom pods, and a small piece of cinnamon.

 

How to Bring It Together:

 

Step 1:

The Perfect Batter

In a large mixing bowl, combine the sliced onions and all the spices.

Pro tip: Don’t add water yet! Let the onions sit with the salt for a few minutes, they will release their own moisture. Then, fold in the Besan and rice flour. If needed, add just a splash of water to bind it all together. Fry small spoonfulls in medium-hot oil until they turn a beautiful golden brown.

Step 2:

Brewing the Masala Chai

In a saucepan, boil water with the crushed ginger, cardamom, and cinnamon. Once the water is infused with the spice aroma, add the tea leaves and sugar. Pour in the milk and let it simmer on low heat. Watch the color change to a rich, inviting reddish-brown—that’s when you know it’s ready! 

Chef’s Secret Tips for Success

  • For the Crunch: Add one tablespoon of hot frying oil directly into your raw pakora batter. It makes them impossibly crispy!

  • For the Flavor: Always simmer the chai on low heat after adding milk. This allows the spices to fully open up and infuse the tea.
